High-Protein Egg Bites

Ingredients:

  • 1 dozen organic eggs

  • 8 oz ham steak, cubed

  • ½ cup baby spinach, chopped

  • ¼ cup unsweetened almond milk

  • 6 grape tomatoes, diced

  • 1/3 cup bell peppers, diced

  • 1/3 cup onion, diced

  • ¼ teaspoon garlic powder

  • ¼ teaspoon black pepper

  • Sea salt to taste

Instructions:

1) Preheat oven to 350 degrees F. Grease a 12-cup muffin pan with melted coconut oil.

2) Add cubed ham, grape tomatoes, bell peppers, diced onions, and chopped spinach to the muffin tin cups. Distribute evenly.

3) In a large bowl, whisk together eggs, almond milk, garlic powder, salt, and black pepper.

4) Pour egg mixture in each muffin cup, filling it up about ¾ of the way.

5) Bake for 25-27 minutes, until eggs are fully set.

6) Let egg bites cool for about 5 minutes before removing from the pan.
