Ingredients:
1 pound large shrimp, peeled and deveined
5 cups fresh arugula
1 large ripe mango, sliced
1 large avocado, sliced
½ cup walnuts, chopped
3 tablespoons olive oil
2 tablespoons fresh lime juice
1 ½ teaspoons of garlic, minced
1 teaspoon honey
1 teaspoon Dijon mustard
1 teaspoon salt
½ teaspoon black pepper
½ teaspoon paprika
Directions:
In a large bowl, toss shrimp with 1 tablespoon olive oil, 1 teaspoon minced garlic, paprika, ½ teaspoon salt, ¼ teaspoon black pepper, and ½ tablespoon lime juice.
