Ingredients:

  • 2 large zucchinis

  • 1 pound of ground turkey

  • 1 small yellow onion, diced

  • 2 cloves garlic, minced

  • 1 red bell pepper, diced

  • 1 small tomato, diced

  • 1 cup dairy-free cheddar cheese, shredded

  • 1 tablespoon olive oil

  • ½ teaspoon salt

  • ½ teaspoon black pepper

  • ½ teaspoon paprika

  • ½ teaspoon Italian seasoning

  • Fresh cilantro or parsley

Instructions:

  1. Preheat your oven to 400 degrees Fahrenheit. Slice each zucchini in half lengthwise. Use a spoon to scoop out the center, leaving about ¼ inch of zucchini around the edges. Finely chop the scooped zucchini flesh and set aside.

  2. Heat olive oil in a large skillet over medium heat. Add the onion and garlic and sauté for 2-3 minutes. Add the ground turkey and cook until browned and fully cooked, breaking it apart as it cooks.

  3. Stir in the chopped zucchini, red bell pepper, and tomato. Season with salt, pepper, paprika, and Italian seasoning. Cook for another 5-7 minutes, until the vegetables are tender.

  4. Arrange the zucchini halves in a lightly greased baking dish. Spoon the meat and vegetable mixture into each zucchini boat.

  5. Sprinkle over the shredded cheddar cheese.

  6. Bake uncovered for 20-25 minutes, until the zucchini is tender and the cheese is melted and lightly browned.
