Ingredients:
2 medium sweet potatoes, peeled and cubed
8 oz smoked sausage, sliced into rounds
4 slices of bacon, chopped
1 large egg
2 cloves garlic, minced
½ medium yellow onion, sliced
½ red bell pepper, chopped
½ orange bell pepper, chopped
1 cup cherry tomatoes, halved
2 tablespoons olive oil
2 tablespoons fresh parsley, chopped
1 tablespoon fresh cilantro, chopped
1 teaspoon smoked paprika
½ teaspoon garlic powder
½ teaspoon dried thyme
Salt and black pepper, to taste
Instructions:
Heat a large cast-iron skillet over medium heat. Add the chopped bacon and cook until browned and slightly crisp. Leave about 1 tablespoon of excess grease in the skillet.
Add the sliced sausage and cook for 3-4 minutes, stirring occasionally, until browned on both sides. Remove and set aside.
Add olive oil and diced sweet potatoes to the skillet. Season with smoked paprika, garlic powder, thyme, salt, and pepper. Cook for about 10-12 minutes, stirring occasionally, until the potatoes begin to soften and brown.
Stir in onion, bell peppers, and garlic. Cook for another 5-6 minutes, until the vegetables are tender.
Stir in halved tomatoes, cooked sausage, and bacon. Cook for another 2-3 minutes, allowing the tomatoes to soften and everything to combine.
Make a small well in the center of the hash. Crack an egg into the well. Cover the skillet and cook for 4-6 minutes, or until the egg whites are set and the yolks are cooked to your preferred doneness.
