Turkey Meatball Soup

Ingredients:

  • 1 bag frozen turkey meatballs

  • 6 cups chicken broth

  • 2 cups fresh spinach

  • 2-3 cloves garlic, minced

  • 3 carrots, sliced

  • 2 celery stalks, sliced

  • 1 small onion, diced

  • 1 tablespoon olive oil

  • 1 teaspoon Italian seasoning

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

  • Juice of ½ lemon

  • Dairy-free shredded mozzarella (optional, for garnish)

Instructions:

1) Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery. Cook until the veggies are softened, about 5 minutes. Stir in garlic and cook for a minute.
