Paleo Buckeyes

These no-bake paleo buckeyes are packed with protein and sweetness! Almond butter is known to be rich in fiber, heart-healthy fats, calcium, and magnesium. It’s gluten-free, cholesterol-free, and low in sodium. Using maple syrup as a sweetener to this recipe will provide you with vitamins, minerals, and nutrients! Almond flour is high in fiber and has a significantly lower glycemic index than other types of processed flour. Dark chocolate is known to be high in antioxidants, rich in nutrients, and promotes healthy cardiovascular function. Enjoy!

Ingredients:

  • 1 ½ cups almond butter

  • ⅓ cup almond flour

  • ⅓ cup maple syrup

  • ¼ cup melted coconut oil

  • ½ tsp sea salt

  • 1 tsp pure vanilla extract

  • 1 cup dark chocolate chips

  • Small handful of chopped nuts (for topping)

 Instructions:

1) Combine almond butter, maple syrup, and coconut oil in a large bowl until smooth.

2) Incorporate the almond flour, vanilla, and salt into the mixture.

3) Place mixture in freezer for 30-45 minutes until firm.

4) Once firm, roll into 20-25 balls and place on parchment paper. Place in freezer for an additional 30 minutes.

5) Melt dark chocolate chips over stovetop until fully melted.

6) Remove balls from freezer and and dip/coat each in melted chocolate. Place back on baking sheet and sprinkle chopped nuts over each buckeye ball. Place in freezer again for 30 more minutes.

7) Once firm, serve and enjoy!

These dessert dates will be sure to satisfy your sweet tooth! Dates are full of vitamins, minerals, and healthy nutrients! They are considered a superfood, known to promote good digestion, help treat anemia, and lower cholesterol levels. Almond butter is rich in fiber, heart-healthy fats, and magnesium. Adding pistachios to this quick recipe will provide you with a number of antioxidants, Vitamin B, and fiber. They are known to improve the immune system, reduce cholesterol levels, and are packed with phytonutrients. Enjoy this sweet treat for a snack or dessert!

Ingredients:

  • 2 cups pitted dates

  • 2 tbsp almond butter

  • 1 tbsp pistachios, finely chopped

  • 1/2 tsp sea salt

Instructions:

1) Line baking sheet with parchment paper.

2) Open each pitted date and fill with almond butter and pistachios.

3) Once each date has been filled, place baking sheet of dates in freezer for around 10-15 minutes.

4) Remove baking sheet from freezer and enjoy!

Paleo Samoa Bars

These gluten-free, dairy-free, and paleo friendly Samoa bars will be sure to satisfy your sweet tooth! Coconuts are known to be rich in fiber, increase energy levels, improve levels of good cholesterol, and help with weight loss. Substituting almond flour for traditional wheat flour in this dessert is a great alternative, as it is gluten-free and low in carbohydrates. Almond butter is rich in fiber, calcium, and magnesium. Using maple syrup as a sweetener provides antioxidants, minerals, and vitamins to this sweet treat. Drizzle on some dark chocolate and toasted coconut and enjoy!

Ingredients:

Yields 16 bars

  • 1 cup almond flour

  • 2 ¼ cup coconut, shredded

  • 1 cup toasted coconut, shredded (for topping)

  • ½ cup almond butter

  • ⅔ cup maple syrup

  • ¾ cup coconut oil

  • 3 oz dark chocolate

Instructions:

1) Line a 9 x 5 baking dish with parchment paper.

2) Combine 1 cup coconut (non-toasted), almond flour, 3 tbsp maple syrup, and ⅓ cup of melted coconut oil in a bowl to create the crust.

3) Place well-combined crust into pan and place in freezer for 10-15 minutes.

4) Combine almond butter, 3 tbsp of coconut oil, and the remaining amount of maple syrup and coconut (non-toasted) to create caramel layer. Remove dish from freezer and pour caramel on top. Place dish back into the freezer for another 10-15 minutes.

5) Combine the dark chocolate and remaining coconut oil in a small stove pot and warm until fully melted.

6) Remove dish from freezer and drizzle chocolate over the top. Sprinkle on toasted coconut. Place dish back into the freezer for 5-10 minutes.

7) Once hardened, remove dish from freezer, slice into 16 squares, and enjoy!

Blueberry Lemon Loaf

Enjoy this sweet and zesty blueberry lemon loaf as a filling treat! Blueberries are known to reduce inflammation in the body, support skin health, and support urinary tract health. They are full of essential nutrients such as Vitamin C, Vitamin K, and manganese. Lemons help with digestion, balance pH levels throughout the body, and aid the body in detoxification. Coconut flour and almond flour are great alternatives for regular flour, as they are both gluten-free and high in fiber. Adding in bananas and maple syrup as sweeteners are great alternatives to processed sugar! Both ingredients are full of vitamins and antioxidants, which are essential for a well-functioning body. Serve up a slice for breakfast or enjoy for dessert!

Ingredients:

Yields 12 slices

Bread

  • 3 tbsp of coconut flour

  • 2 cups of almond flour

  • 1 tsp of baking soda

  • 2 tbsp of almond milk

  • 3 eggs

  • ¼ cup of maple syrup

  • 2 bananas, mashed

  • 1 cup blueberries

  • 1/4 cup of melted coconut oil

  • Zest and juice of 1 lemon

 Glaze

  • 1/3 cup of coconut oil

  • 1 tsp maple syrup

  • Zest and juice of 1 lemon

 Instructions:

1) Preheat the oven to 350 F.

2) Line loaf pan with parchment paper.

3) Mix almond flour, coconut flour, and baking soda in bowl.

4) Mix all wet ingredients in separate bowl. Then, combine wet and dry ingredients. Gently fold in the blueberries.

5) Place in oven and bake for 40-50 minutes

6) While the loaf is in the oven, make the glaze by combining the coconut oil, maple syrup, lemon juice and zest. Place in fridge to thicken.

7) Once loaf is fully baked, remove from oven and let cool. When fully cool, drizzle glaze on top. Enjoy!
