Mango and Avocado Salsa

Salsa is a savory snack that provides an easy way to add fresh produce into your diet. My mango and avocado salsa adds a pop of flavor to your traditional salsa and can be used to top off any of your favorite meals! Preparing salsa from fresh ingredients provides many more nutrients compared to canned salsa that has been pasteurized with heat. In addition, making homemade salsa guarantees that there are no preservatives, added sugar, or unhealthy additives. This recipe can be used as a snack, dip, or garnish and has a fresh and fruity taste that is perfect on a warm summer day. Easy to prepare and full of flavor, this salsa is a must try. Add your favorite produce or additional seasonings to make it your own!

Ingredients:

Serves 4

  • 2 cups diced mango

  • 1 cup chopped avocado

  • ½ cup diced onion

  • 2 tablespoons olive oil

  • ¼ cup chopped cilantro

  • Lime juice (from one fresh lime)

  • Sea salt and black pepper to taste

Instructions

1) Place chopped produce in a mixing bowl.

2) Add olive oil and seasonings to taste.

3) Mix and enjoy!

Creamy Berry Popsicles

Cool off with a delicious treat that combines the sweetness of berries and the creamy texture of coconut milk. With a refreshing taste and plenty of antioxidants, these frozen popsicles are the perfect snack for summer. You can add your favorite berries to mix it up depending on what you prefer, and even add some dark chocolate for a more decadent taste! The natural sweetness of the fruit takes the place of any added sugars and makes these popsicles extra delicious. Easy and quick to prepare, this is the perfect snack for the hot weather. Refresh and relax with my creamy berry popsicles!

 Ingredients:

Makes 6 Popsicles

  • ½ cup of berries (blueberries, strawberries, or raspberries)

  • 1 can unsweetened coconut milk (make sure to gut full fat coconut milk)

 Instructions

1) Blend ingredients in a high-speed blender or food processor to a smooth consistency.

2) Pour mixture into popsicle molds.

3) Freeze until solid. Enjoy!

Crunchy Kale Chips

Crunchy and salty snacks are perfect for movies, game night, outdoor adventures, or just snack time. Finding a healthy snack that satisfies your cravings can be hard to do, but these kale chips are the perfect snack while also being nutritious and guilt-free! They can be as crunchy as desired, and seasonings can be added depending on what you wish for.

Kale chips are a great way to add more dark leafy greens to your diet. Kale is one of the most nutrient dense foods on the planet providing fiber, magnesium, folate and a multitude of antioxidants. You won’t regret swapping out your traditional snacks with these amazing crunchy kale chips!

Ingredients:

Serves 2

  •  ½ lb. of kale (one large bunch)

  • ¼ teaspoon cumin

  • 2 tablespoons coconut oil

  • ¼ teaspoon sea salt

Instructions

1) Preheat the oven to 350 degrees F.

2) Rinse kale and let dry, carefully tear the leaves from the stem and rip into bite sized pieces.

3) In a large bowl, mix melted coconut oil and spices. Add kale pieces and make sure they are evenly coated.

4) Lay kale on baking sheets and sprinkle with more sea salt if desired.

5) Bake kale chips for 10-15 minutes, or until edges are brown and crunchy.

Cauliflower Mashed Potatoes

Mashed potatoes are a favorite comfort food of mine and the perfect addition to many different types of meals. They are quick and easy to make, and with a simple ingredient swap, they can be packed with nutrients without all of the carbs! My cauliflower mashed potatoes are a great source of fiber, fatty acids, and an antioxidant known as sulforaphane. Sulforaphane has been shown in research studies to suppress the growth of many cancer types, regulate blood pressure, and lower the risk of complications from Type 2 Diabetes. In addition, this recipe provides an excellent source of choline, which is an essential nutrient used by the human body for DNA synthesis and neurotransmitter production.

If you are following a low carbohydrate diet, or just looking for a new side dish for your meals, my cauliflower mashed potatoes will not disappoint!

Ingredients:

Serves 2

  • 1 large head of cauliflower (cut into florets)

  • 1 tbsp. coconut oil

  • ¼ cup unsweetened coconut milk

  • Fresh chives (chopped)

  • 1 bulb garlic

  • Sea salt and pepper to taste

Instructions

1) Preheat the oven to 415 degrees F. Remove the outer layers of the garlic bulb and chop off the top of the bulb to reveal the garlic cloves inside.

2) Place the garlic bulb on a piece of parchment paper and coat well (on all sides) with melted coconut oil. Bake for 30 minutes and remove from oven. Once cooled, remove the individual garlic cloves from their skin and set aside.

3) Fill a large pot with a few inches of water and bring to a boil. Once boiling, place a steamer basket inside the pot and put the cauliflower florets in the steamer. Cover pot and let seam for 15-20 minutes.

4) Remove cauliflower from steamer basket. Add cauliflower, roasted garlic, coconut milk, salt, and pepper to food processor and blend until smooth. Sprinkle with chives and enjoy!
