Deviled Eggs

These deviled eggs are packed with protein and flavor! Eggs are known to be a great source of protein, are low in sodium, and rich in omega-3 fatty acids. They also contain iron, zinc, folate, and vitamins A, D, and E! For this recipe, it’s important to find the perfect, paleo-friendly mayonnaise that has a great consistency and is flavorful. Dijon mustard is rich in selenium, magnesium and copper. It also contains manganese and a number of antioxidants. Paprika regulates blood pressure and is a great source of vitamin C. Top each egg off with your favorite spices and enjoy!

Ingredients:

  • 12 eggs, hard boiled and peeled

  • ⅓ cup & 2 tbsp paleo mayonnaise

  • 1.5 tbsp Dijon mustard

  • ¼ tsp sea salt

  • ¼ tsp black pepper

  • 2 tsp paprika

 Instructions:

1) Cut each hard boiled/peeled egg in half lengthwise.

2) Scoop out egg yolks and place in mixing bowl.

3) Place egg white halves on a tray and set aside.

4) Combine yolks, paleo-friendly mayonnaise, mustard, salt, and pepper until smooth.

5) Scoop spoonful of mixture into each half egg and top with paprika. Enjoy!

BBQ Chicken Poppers

Make these BBQ chicken poppers as an appetizer for your next get-together! Chicken is known to be a great source of protein, is low in sodium, and high in B vitamins. It also helps in reducing blood pressure and contains zinc, magnesium and iron! Using arrowroot starch is a great alternative to regular flour, as it is high in vitamins and minerals. It is also gluten-free, grain-free, and paleo friendly! When making this recipe, it’s important to incorporate the right BBQ sauce, which can be tricky. It’s best to opt for a sauce that is low in carbs, sugar, and is paleo friendly. Serve these chicken poppers with your favorite sauce and enjoy!

Ingredients:

  • 1 lb chicken breast, sliced into chunks

  • ⅓ cup arrowroot starch

  • ⅓ cup and 2 tbsp melted coconut oil

  • 1 ½ tsp sea salt

  • ½ tsp black pepper

  • 1 cup paleo BBQ sauce

Instructions:

1) Place sliced chicken into a bowl, ⅓ cup of coconut oil into a separate small bowl, and arrowroot starch with salt and pepper in another bowl.

2) Dip chicken in coconut oil, then coat in arrowroot starch. Next, set coated chicken on a dish. Repeat the process until all pieces of chicken are coated.

3) With the remaining 2 tbsp of coconut oil, melt in a large skillet over medium heat and begin to place coated chicken chunks in the skillet to crisp. Turn pieces until each are evenly crisp.

4) Once cooked all the way through, place chicken in a large mixing bowl. Let chicken cool before adding in paleo BBQ sauce. Mix until each piece is coated well. Enjoy!

Paleo Buckeyes

These no-bake paleo buckeyes are packed with protein and sweetness! Almond butter is known to be rich in fiber, heart-healthy fats, calcium, and magnesium. It’s gluten-free, cholesterol-free, and low in sodium. Using maple syrup as a sweetener to this recipe will provide you with vitamins, minerals, and nutrients! Almond flour is high in fiber and has a significantly lower glycemic index than other types of processed flour. Dark chocolate is known to be high in antioxidants, rich in nutrients, and promotes healthy cardiovascular function. Enjoy!

Ingredients:

  • 1 ½ cups almond butter

  • ⅓ cup almond flour

  • ⅓ cup maple syrup

  • ¼ cup melted coconut oil

  • ½ tsp sea salt

  • 1 tsp pure vanilla extract

  • 1 cup dark chocolate chips

  • Small handful of chopped nuts (for topping)

 Instructions:

1) Combine almond butter, maple syrup, and coconut oil in a large bowl until smooth.

2) Incorporate the almond flour, vanilla, and salt into the mixture.

3) Place mixture in freezer for 30-45 minutes until firm.

4) Once firm, roll into 20-25 balls and place on parchment paper. Place in freezer for an additional 30 minutes.

5) Melt dark chocolate chips over stovetop until fully melted.

6) Remove balls from freezer and and dip/coat each in melted chocolate. Place back on baking sheet and sprinkle chopped nuts over each buckeye ball. Place in freezer again for 30 more minutes.

7) Once firm, serve and enjoy!

Paleo Nachos

Make these paleo-friendly nachos for friends or family as a game day appetizer! Black beans are known to be high in fiber, low in fat, and rich in protein. Tomatoes improve digestive health, are great for skin health, and lower cholesterol. Incorporating red onions into this dish will provide you with a number of antioxidants and help improve your immune system! Avocados are known to provide a healthy dose of monounsaturated fats, which can be helpful in lowering bad cholesterol as well as making you feel full for longer! Drizzle on some dairy-free sour cream and sprinkle on jalapeños and cilantro for a more flavorful dish. Enjoy!

Ingredients:

Serves 4

  • 3 cups organic paleo tortilla chips

  • 3 tbsp dairy-free sour cream (see Miss Alexa’s approved dairy-free sour cream products here)

  • 1 cup organic black beans

  • 1 cup tomatoes, diced

  • 1 cup red onion, diced

  • 1 cup avocado, sliced

  • ½ cup jalapeños, sliced

  • ½ cup cilantro

Instructions:

1) Place and spread out organic tortilla chips on sheet pan.

2) Sprinkle on beans, tomatoes, onion, and avocado over chips.

3) Drizzle dairy-free sour cream over chips.

4) Top with jalapeños and cilantro. Enjoy!
