Paleo Carrot Cake

This tasty paleo carrot cake will be your next favorite dessert item! Carrots are known to improve digestion, boost the immune system, and prevent macular degeneration. Dry Ingredients:

  • 2 cups blanched almond flour

  • ½ cup coconut flour

  • ½ cup shredded coconut, unsweetened

  • 1 tsp baking soda

  • 1 tbsp ground cinnamon

  • ¼ tsp ground nutmeg

  • ½ tsp sea salt

Wet Ingredients:

  • 4 eggs, room temperature

  • ¾ cup organic maple syrup

  • ⅓ cup tahini

  • ¼ cup almond milk, unsweetened

  • 1 tsp vanilla extract

  • ⅓ cup coconut oil, melted and cooled

  • 3 cups carrots, shredded

Frosting:

  • ½ cup dairy-free butter, room temperature

  • 8 oz dairy-free cream cheese, room temperature

  • 3 cups paleo-friendly powdered sugar

  • 2 tsp pure vanilla extract

  • 1 tbsp almond milk, unsweetened

Topping:

  • ½ cup of pecans or walnuts

Instructions:

1) Preheat oven to 350 F and line two 8-inch round cake pans with parchment paper.

2) Whisk almond flour, coconut flour, shredded coconut, baking soda, cinnamon, nutmeg and sea salt together in a large bowl and set aside.

3) In a separate bowl, whisk together eggs, maple syrup, tahini, almond milk, and vanilla extract. Slowly mix in coconut oil and carrots.

4) Add dry ingredients to wet ingredients until well combined.

5) Divide batter evenly between pans and bake for around 30-40 mins. When done, take pans out of oven and set aside to completely cool.

6) For the frosting, use an electric mixer to whip paleo-friendly butter and cream cheese until fluffy. Add in powdered sugar, vanilla extract, and almond milk and mix for 3 more minutes.

7) Once the frosting is done and the cake is cooled, frost between each layer as well as the sides of the cake.

8) Sprinkle on pecans and/or walnuts to the cake. Enjoy!

Instructions:

1) Preheat the oven to 400 F.

2) Boil a large pot of water and add in the brussels sprouts. Cook for around 2-3 minutes.

3) Drain brussels sprouts and place in a large bowl.

4) Add in coconut oil, garlic, and cayenne pepper to bowl and mix.

5) Place coated brussels sprouts onto baking sheet and sprinkle with sea salt. Bake for around 18-20 minutes, until they are brown and crispy on the outside.

6) If necessary, add more sea salt to taste. Drizzle with lemon juice and serve. Enjoy!

  • 1 cup pecan halves

  • 1 cup almonds

  • 1 cup cashews

Instructions:

1) Preheat oven to 250 F and line a baking sheet with parchment paper.

2) In a large bowl, whisk egg white, water, and vanilla extract together until the mixture is frothy.

4) Add all nuts to egg white mixture and toss until evenly coated.

  • 5-6 eggs

  • 2 bell peppers, diced

  • ½ tsp black pepper

4) When potatoes begin to soften, add in diced onion, tomato, and bell pepper and cook for 7-10 minutes until potatoes start to brown.

5) Begin to add eggs to the skillet and stir until fully scrambled and all ingredients are fully incorporated. Top with any additional spice or sauce and enjoy!
