Apple Cinnamon Muffins

Ingredients:
1 ½ cups gluten-free baking flour
1-2 peeled apples, diced
2 large eggs
½ cup coconut oil, melted
¼ cup unsweetened apple sauce
¼ cup maple syrup
2 teaspoons cinnamon
½ teaspoon baking soda
½ teaspoon baking powder
¼ teaspoon salt
Instructions:
1) Preheat oven to 350 degrees Fahrenheit. Line a 12-cup muffin tin with liners.
2) In a large bowl, combine coconut oil, apple sauce, and maple syrup. Stir in eggs.
