Shrimp Avocado Arugula Salad

Ingredients:
For the salad:
4 cups of arugula
1 pound cooked shrimp, peeled and deveined
2 avocados, sliced
¼ cup red onion, sliced
For the dressing:
3 tablespoons of olive oil
2 tablespoons fresh lemon juice
1 teaspoon lemon zest
1 teaspoon organic Dijon mustard
1 garlic clove, minced
Salt and black pepper to taste
Instructions:
1) In a small bowl or jar, mix olive oil, lemon juice, lemon zest, Dijon mustard, garlic, salt and black pepper. Taste and adjust as needed. Set aside.
2) In a large bowl, place your arugula. Add your cooked shrimp, avocado slices, and red onion.
