Steak and Arugula Salad

Ingredients:

For the steak

  • 1 pound of flank steak

  • 1 tablespoon olive oil

  • 1 teaspoon salt

  • ½ teaspoon black pepper

For the salad

  • 4 cups mixed greens

  • ½ cup cherry tomatoes, halved

  • ¼ red onion, thinly sliced

Vinaigrette dressing

  • 3 tablespoons olive oil

  • 1 tablespoon balsamic vinegar

  • 1 teaspoon organic Dijon mustard

  • ½ teaspoon honey

  • Salt and pepper to taste

Instructions:

1) Pat your steak dry and rub with olive oil, salt, and pepper.

2) Over medium-high heat, cook the steak in a skillet, 4-5 minutes on each side.
